I followed up that beautiful roast with homemade chicken pot pie. I used the recipe at the cookingforengineers (called analytical cooking) site I have in my blogroll, but I used Earth Balance instead of butter, whole wheat instead of white flour and soymilk in place of the cow’s milk. Turned out scrumdilly.
Then tonight I took another whole chicken and boiled it up for soup; even deboned the thing. The problem is that Bella did a cheesecake fundraiser at school and my freezer is overflowing with cheesecakes, pizzas in a bucket, and frozen cookie batter. I had to unload my other freezer stuff into my fridge to make room … and so tomorrow I need to make some oxtail soup: a Korean classic. If anybody’s in the neighborhood, feel free to come by for some food.
Or you could suspect that I am procrastinating. Sue says that I can’t rest on the five pages I wrote last Friday for very much longer.
